It’s Easter tomorrow (16/04/2017), and surprisingly it falls on the same date in both Calendars-
Orthodox and Catholic! As a Bulgarian who’s lived in the UK for the past 9 years, I’ve always celebrated it
on a different date than people in here due to the difference in Eastern European (Orthodox) and
Western European countries! I think different Christian calendars are silly, especially in 2017. I’m
personally not Religious, but I’m Spiritual, and Holidays like Easter and Christmas to me are more a
tradition that brings family together, rather than a religious thing!
The thing I’ve most enjoyed through the years about Easter was the Easter Bread, or Brioche loaf, or Hot
Cross buns, or Fruit bread – whatever you call it! It varies from country to country, and in Bulgaria we
call it Kozunakand we put milk, dried fruit (mostly raisins/sultanas) and lemon zest in it, and
chopped or whole blanched almonds on top, and we usually make it into a braided shape. I have
developed a Low Carb Paleo version of it, and I’m happy to share it with you on this Holiday!

Paleo Low Carb brioche loaf/buns

Ingredients:
4 Organic eggs
1/4 cup of Honey or Stevia for a low carb option
1/4 cup of unsweetened sultanas/raisins/dried berries
60g grass-fed butter, melted
1/3 cup almond or coconut milk
200g almond flour/meal
1/3 cup milled linseed/flaxseed
1/2 Tbsp Xantan gum
2 tsp baking powder(gluten free) or 1 tsp baking soda if strict Paleo
1/4 tsp Sea salt
1 tsp vanilla extract/vanilla bean
1/2 tsp Ceylon cinnamon
1/2 tsp Nutmeg
1/2 tsp Mixed Spice
zest of 1 lemon, thinly grated
whole or flaked blanched almonds for sprinkling on the top

Method:
Preheat your oven to 170 degrees Celsius. Beat the wet ingredients with a hand mixer. Add in the dry
ingredients (without the dry fruit and almonds) and mix well with the mixer. Fold in the dry fruit with a
silicone spatula and pour into a loaf pan lined with a greaseproof baking paper, or make 4 equal buns
and put onto a baking sheet lined with a greaseproof baking paper. Bake for about 40-45 minutes, until
it’s golden on the top and a toothpick comes out clean. Half an hour into the baking, take it out and
sprinkle with blanched almonds (press them in slightly). Enjoy your Easter!
